Strawberry Bread

Serves: 1 loaf
- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup vegetable oil
- 1 cup mashed strawberries
- ½ teaspoon cinnamon
- ½ cup chopped pecans or walnuts
- 2 cups granulated sugar
- 2 eggs, lightly beaten
- Preheat oven to 350 degrees F.
- Spray and lightly flour loaf pan.
- Shake off excess flour.
- In a large bowl combine flour, salt, baking soda, and sugar.
- Mix well.
- Make a well in center of dry ingredients.
- Pour eggs in well.
- Add oil and mashed strawberries.
- Mix well.
- Fold in chopped nuts.
- Pour evenly into prepared pans.
- Sprinkle tops with additional granulated sugar.
- Bake for 1 hour or until toothpick is inserted into center of loaf and comes out clean.
- Cool in pan for 20 minutes before slicing.
