Beef and Broth Ingredients
  • 3 pound rump roast, chuck roast or arm roast
  • beef bones and fat (for stock) or an inferior substitute would be 3 beef bullion cubes
  • 4 Tablespoons canola oil (to brown meat)
  • 1 bottle of good quality dark beer
  • 4 bay leaves
  • 3 cloves of garlic, peeled and sliced
  • 4 Tablespoons peppercorns
  • 4 Tablespoons sea salt
  • 3 carrots, peeled and cut into chunks
  • 3 celery stalks, cut into chunks
  • 1 cup Coloma Frozen Foods Diced Onions
Dressing and Additional Ingredients:
  • 2 envelopes Italian Dressing
  • white vinegar
  • extra virgin olive oil
  • 1 cup chopped pepperoncini peppers
  • cracked peppercorns
  • sea salt
  • French bread (can be whole or pre-sliced)
  • ½ pound Muenster cheese or Provolone cheese sliced
Instructions
Directions the night before:
  1. In a large skillet with a little canola oil brown roast on all sides.
  2. Place roast in a large slow cooker with liner.
  3. Add enough water to slightly cover roast and 1 bottle of good quality dark beer.
  4. Add bay leaves, garlic, 4 Tablespoons peppercorns, 4 Tablespoons sea salt, carrots, celery, and onions to roast in crockpot or slow cooker.
  5. Place slow cooker and all contents in refrigerator over night.
Directions the morning of:
  1. Assemble all parts of slow cooker and cook beef in broth on low for 10 hours.
  2. After 10 hours of cooking make dressing for beef. Use 2 envelopes of Italian dressing mix prepared according to package using white vinegar and extra virgin olive oil.
  3. Remove roast from slow cooker and shred apart with forks. Discard any bones if necessary.
  4. Add Italian dressing to roast. Stir.
  5. Add 1 cup chopped pepperoncini peppers to roast.
  6. Generously add cracked peppercorns and sea salt onto roast. Season to taste.
  7. Preheat oven to 375 degrees F.
  8. Slice French bread.
  9. Lightly spray bottom of pizza pan or baking dish.
  10. Arrange French bread on baking dish.
  11. Cover bottom slice of French bread with Italian beef.
  12. Top slice with Muenster or Provolone cheese.
  13. Heat until cheese is melted and bread is a little crispy.
  14. Serve with additional pepperoncini peppers and favorite steak sauce.
