Slow Cooker Bacon-Wrapped Pork Loin with Apples and Sauerkraut

- 1 (3 pound) boneless pork loin
- ½ teaspoon black pepper for loin rub
- 1 teaspoon black pepper for broth seasoning
- ½ teaspoon salt for loin rub
- 1 teaspoon sale for broth seasoning

- 2 small onions, quartered
- 3 garlic cloves, minced
- 2 bay leaves
- 4 Tablespoons Dijon mustard
- 2 cups jarred sauerkraut
- 1 Tablespoon dried parsley
- 1 cup apricot preserves
- 6-8 slices Dewig Meats Hickory Smoked Bacon
- 3 Tablespoons olive oil
- 1 cup Coloma Frozen Food Diced Onions
- 1 Tablespoon dried thyme
- 1 (12 ounce) bottle stout beer (Guiness)
- 3 firm apples (Gala), peeled and thick sliced
- 2 cups chopped cabbage
- 2 teaspoon lemon juice
- ½ cup chicken broth (divided)
- Trim fat from loin.
- Season loin with salt and pepper amounts marked in ingredients and rub into loin.
- Wrap top and sides of loin with bacon and secure with kitchen string.
- Place oil in skillet over medium heat.
- Brown loin on all sides for 10 minutes until golden brown. Reserve drippings.
- Place onions, garlic, thyme, bay leaves, marked salt and pepper from ingredient list in slow cooker.
- Place browned loin on top.
- Add beer to reserved drippings and simmer over medium heat for 8-10 minutes until reduced by half.
- Add mustard and stir until combined.
- Pour mixture over pork loin.
- Add apples, sauerkraut, cabbage, lemon juice, and parsley.
- Cook on low for 2½ hours or until internal temperature is 150 degrees.
- Remove loin from slow cooker.
- Remove string and sliced loin.
- Place sliced loin back into slow cooker, and stir together.
- In a small saucepan combine apricot preserves and ¼ cup of chicken broth.
- Stir over low heat until combined, approximately 4-5 minutes.
- Serve topping over sliced loin.
