Ingredients

  • 1 (3 pound) boneless pork loin
  • 1/2 teaspoon black pepper for loin rub
  • 1 teaspoon black pepper for broth seasoning
  • 1/2 teaspoon salt for loin rub
  • 1 teaspoon sale for broth seasoning
  • kitchen string
  • 2 small onions, quartered
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 4 Tablespoons Dijon mustard
  • 2 cups jarred sauerkraut
  • 1 Tablespoon dried parsley
  • 1 cup apricot preserves
  • 6-8 slices Dewig Meats Hickory Smoked Bacon
  • 3 Tablespoons olive oil
  • 1 cup Coloma Frozen Food Diced Onions
  • 1 Tablespoon dried thyme
  • 1 (12 ounce) bottle stout beer (Guiness)
  • 3 firm apples (Gala), peeled and thick sliced
  • 2 cups chopped cabbage
  • 2 teaspoon lemon juice
  • 1/2 cup chicken broth (divided)
Instructions
  1. Trim fat from loin.
  2. Season loin with salt and pepper amounts marked in ingredients and rub into loin.
  3. Wrap top and sides of loin with bacon and secure with kitchen string.
  4. Place oil in skillet over medium heat.
  5. Brown loin on all sides for 10 minutes until golden brown. Reserve drippings.
  6. Place onions, garlic, thyme, bay leaves, marked salt and pepper from ingredient list in slow cooker.
  7. Place browned loin on top.
  8. Add beer to reserved drippings and simmer over medium heat for 8-10 minutes until reduced by half.
  9. Add mustard and stir until combined.
  10. Pour mixture over pork loin.
  11. Add apples, sauerkraut, cabbage, lemon juice, and parsley.
  12. Cook on low for 2 1/2 hours or until internal temperature is 150 degrees.
  13. Remove loin from slow cooker.
  14. Remove string and sliced loin.
  15. Place sliced loin back into slow cooker, and stir together.
  16. In a small saucepan combine apricot preserves and 1/4 cup of chicken broth.
  17. Stir over low heat until combined, approximately 4-5 minutes.
  18. Serve topping over sliced loin.
